About Mario Simone Verrillo – “Mariello”

Mario Simone Verrillo, known as Mariello, was born in Milan in 1992 to a family originally from Naples. Like many traditional Italian families, he was introduced to the culinary world from an early age, inspired by the authentic cooking of his grandmothers, Elvira and Pina.

At just 14, Mario enrolled in culinary school, where he quickly stood out as one of the most talented students. He graduated a year early and immediately began his international career, working first at the Italian Embassy in Brazil and later in London. Over the years, he contributed to the opening of several businesses in Germany and Northern Italy, while also collaborating with Michelin-starred chefs at Fiera Milano, refining his knowledge of classical cuisine.
In his twenties, Mario discovered his true passion: the art of pizza. He fell in love with the Roman-style pizza al taglio, which led him to work with Alice Pizza, the most renowned Roman pizza chain in Italy. He continues to deepen his expertise through ongoing training with some of the most respected masters in the field, including Gabriele Bonci.
For Mario, cooking is more than a profession—it is an act of passion, respect, and love for the product. This philosophy is at the heart of Mariello, his own restaurant, where tradition and creativity come together in every slice.
